Serves 4 as a generous snack or simple dessert
This chia seed pudding is very simple and can be prepared in a few minutes for later to enjoy. Unless you are grossed out by their consistency, this pudding is an absolute taste pleaser. You can substitute the honey and vanilla with 1/2 cup shredded coconut which is lightly toasted, particularly if you are not using coconut milk for the pudding. The picture actually used crushed raspberries… You really can’t go wrong…
1/2 cup chia seeds
2 1/2 cup organic coconut milk (can substitute with any nut, rice, soy or real milk)
1 Tbsp local raw honey
1/4 tsp vanilla extract
Add chia seeds to a quart-sized bowl, ideal if it has a matching lid. Add milk, honey and vanilla and combine ingredients well using a whisk or simply with a fork. Make sure all chia seeds are submerged in liquid and stir frequently to prevent formation of lumps.
Let stand in the refrigerator for a few ours, preferably overnight.
Serve with fresh fruit such as diced mangoes, strawberries, blueberries, raspberries or ripe cherries.
