This is a classic dish from my childhood. Delicious, easy enough to make and always a big hit with big and small. You probably already have all you need in your pantry this time of year. Having an apple corer is almost a must, so you might have to add a new kitchen gadget to your assortment of kitchen tools if this recipe sound like something you and your family would like. Also, you can make the dish more festive and serve it with a dollop of vanilla ice cream.
6-8 apples (organic)
1 Tbsp cold butter
3 Tbsp raisins
1-2 Tbsp sugar (I use coconut sugar)
1 tsp cinnamon
Preheat oven to 375 degrees F.
Wash and core the apples.
Arrange in a baking dish so that they can stand upright.
Dice butter and mix with raisins, sugar and cinnamon.
Fill emptied apple cores with raisin mixture.
Bake in oven until soft, approximately 30-35 minutes.
