Baking is not my speciality, although I am getting better at and more interested in it. Partly, because I think that store-bought cookies or sweet breads are just too sweet and filled with who-knows-what. So better to take a little time, bake it yourself and know that you and your family are actually eating something real. I have adapted this recipe from This Chick Cooks and similar cookies have been reproduced, adapted and shared on many gluten-free, grain-free and paleo sites. Hope you like it as much as we did!
1/4 cup coconut oil
3 Tbsp sugar (I used coconut sugar)
1/4 Tbsp vanilla extract
1/2 cup coconut flour (sifted)
1/3 cup chocolate chips
3 Tbsp arrowroot powder (optional)
Pinch of salt
Preheat the oven to 375 degrees.
Mix together coconut oil, sugar, vanilla, eggs and salt and stir until well mixed.
Stir in flour, arrowroot (if using) and chocolate chips. Mix until well combined.
Line cookie tray with parchment paper.
Form balls using a tablespoon and flatten to desired cookie shape. Note that the cookies will not spread.
Cook for 8-12 minutes until lightly golden.
