My inspiration for these little nut and seed combos came when I saw the different versions of Energy Chunks in the Bulk aisle at Whole Foods. You can use whatever fresh nuts and seeds you have at hand, but I think that the combination of walnuts and flaxseeds is great as they are both packed with omega-3s. You can serve them as a snack or as part of dessert with some fresh fruit.
1 cup walnuts
1/2 cups hazelnuts
1/4 cup whole flax seeds
1/4 cup sesame seeds
8-10 fresh dates, pitted
1/2 cup cocoa powder
2 tablespoons chia seeds mixed with 2 tablespoons water
1/4 vanilla extract
1/4 cup shredded coconut (optional)
Mix the nuts, flaxseeds and dates in a food processor until blended. Do not grind to vigorously or it will be too pasty.
Add seeds, cocoa, vanilla and salt to the mixture and roll into balls.
Roll in coconut, desired.
