This recipe is from our friend Carmel Ireland who lives in New Zealand and is a source of great recipe ideas. The pasta is a flavoursome side dish, or add slices of poached chicken breast for a main dish.
1/2 lb wholemeal or plain pasta
1 zucchini, sliced
½ red onion, sliced
1 cup cherry tomatoes, halved
1 handful of grated parmesan cheese
Either 1 handful of torn basil leaves or 2 handfuls of rocket (arugula)
Lemon yoghurt sauce
1 cup plain yoghurt
½ tspn lemon zest
Juice of ½ lemon
Ground white pepper to taste
Mix the sauce ingredients and set aside
While the pasta is cooking, sauté the zucchini and red onion
When the pasta is cooked, mix it together with the sauce, cherry tomatoes, zucchini and onion.
Spoon the pasta into a serving dish. Sprinkle over the parmesan cheese and basil (or rocket)
