Another great use for mint is fresh mint sauce. It is a stable when serving lamb, but can also be used in other recipes instead of dried mint.
2-3 Tablespoons of fresh mint, finely chopped
1/2 cup malt vinegar
1/2 Tablespoons of sugar
A little salt
Carmel’s mother thought her to cover a few tablespoons of finely chopped mint in boiling water.
Add about half a cup of malt vinegar, 1-2 tablespoons of sugar and a little salt.
