Enough for approximately 30 slices of bruschetta.
This spread is a great complement to the olive tapenade – matching the olive tapenade’s strong and distinctive taste. Top each bite with a caper to appeal to the eye.
1 cup gorgonzola cheese
½ cup butter
½ small onion finely chopped
1 teaspoon paprika
Finely chop onion.
Mix remaining ingredients together, adding chopped onion.
Adjust to taste, adding additional cheese or butter to increase or decrease the intensity.
Cut baguette in thin slices and briefly toast them in the oven.
Add as much tapenade as you like.
