Caramelized Red Onions

When it comes to food, eyes-candy is a must! And these caramelized onions add a nice color dimension to any dinner table. And they require pretty much no active time from you.

6 medium red-onions, cut crosswise into 1/2-inch thick slices
2 Tbsp olive oil
2 Tbsp good quality balsamic vinegar
Salt and pepper

Heat broiler, with rack in top position.
Place onions on a rimmed baking dish and coat with olive oil, salt and pepper.
Broil onions until lightly charred, about 4 minutes.
Stir and brush with balsamic vinegar.
Return to oven and broil for another 4 minutes.
They can stay in the oven and caramelize further until you’re ready to use them.
Serve with a sprinkle of parsley, warm or at room temperature.
