Fennel, Avocado and Orange Salad

Serves 4

The salads I grew up with were always quite traditional – beans, lettuce, beets, etc. – but it didn’t take me long to learn to appreciate the more exotic dishes my friend Susanne made for me. This fennel, avocado and orange salad is one of those salads that make you wonder why we don’t try to mix and match fruits and vegetables more often. And, best of all, it is fast, easy and looks quite fancy when done! Try it out and please let us know what you think.

2 ripe avocados
2 oranges
1 medium-sized fennel
2-3 cups mixed greens
2 tablespoons olive oil
1 tablespoon mild vinegar such as champagne vinegar
1 or 2 tablespoons of orange juice
Salt and pepper

The key here is to thinly slice the peeled avocados, oranges and the fennel and to arrange them in layers over the greens.
Layer the fennel first, then the avocado, and finally place the oranges on top.
Mix the salad dressing and pour it over the composed salad.
Do not toss! Instead, maintain the structure as you serve, allowing your family and guests to mix the salad on their plates.

  1. We had a similar salad, with grapefruit instead of oranges, in Disneyworld, of all places, and it was delicious. Thanks for the recipe!

      Thank you for your visit! Yes, grapefruit sounds delicious! I will try it as well. We usually eat them for breakfast but there must be so many other ways to add them to our meals during these wintery months!
