Serves 4 as a side-dish
If you ever run out of ideas for what to do with a vegetable, roasting it is almost always a good option. Anything from onions, garlic, carrots, tomatoes, zucchini, asparagus, cauliflower, potatoes, sweet potatoes, squash, pumpkins taste great roasted, and that list goes on and on. This particular recipe will show you how to roast broccoli, adding a little edge with the garlic and lemon. It is simple to prepare and fast to make (which makes it a favorite of ours). 1 medium bunch of broccoli
3 garlic cloves
Zest of ½ of an organic lemon
2 tablespoons of olive oil
Salt and pepper
Pre-heat the oven to 400.
Wash broccoli, trim woody stems and peel and slice remaining stems.
Cut florets into equal sizes. Cut directly onto the cookie sheet to capture all the little pieces that go astray during the cutting process (this technique also works well for cauliflower).
Mince the garlic cloves.
Mix broccoli, garlic and lemon zest and place in oven.
Roast for 20 minutes, turning it at least once to avoid burning.
